Tight supply of raw materials is affecting many hydrocolloids and prices are likely to rise as a result, according to hydrocolloids expert Dennis Seisun.

Speaking with FoodNavigator at FIE in Frankfurt, Seisun highlighted seaweed-derived hydrocolloids, pectin and seed gums in particular.

For locust bean gum specifically, he says that industry should be ready for a significant increase in prices, after they have remained at "unsustainably low levels" for some time.
